Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Paleo Recipe - Slow Cooker Beef With Broccoli

Since today is our first day back to homeschool I thought it appropriate to share a slow cooker recipe! When our homeschool year starts up my slow cooker becomes my best friend. Things get busy busy around here and dinner being done and ready at dinner time is an amazing thing.

I try not to do the same recipes over and over. Boredom is definitely the enemy of eating healthy.This is a recipe that I came up with recently that is definitely a new favorite.

Paleo Recipe - Slow Cooker Beef With Broccoli (3)

Slow Cooker Beef With Broccoli
2 lbs stew meat
4 cloves garlic, minced
2 tablespoons fresh ginger, minced
1 large yellow onion, chopped
1/3 cup coconut aminos
1 cup less sodium beef stock
2 heads freshbroccoli
1 teaspoon sea salt
1 teaspoon black pepper

Add all ingredients except the broccoli to your slow cooker and cook on low for about 6 hours. Slow cookers can vary greatly, so you may have to play with times and liquid amounts.
Break the broccoli into florets and add on top. Cook an addition 1 to 2 hours on low.

I like to double this recipe so we have plenty of leftovers for quick easy lunches.
